Can this be used in salt water? Mainly inshore within a few hundred yards of land. How is it in the chop?

The pontoon can be used in salt water. It would handle the chop.

I am 6'4" and 320lbs. Will this be comfortable and stable with me in it?

I'm 6'4 250lbs me plus about 150 lbs of camping gear did 26 miles in one day down the Housatonic river in Connecticut without a problem. It was a bit slow but you can't beat it for comfort. I've done that same trip in a canoe many times and my back would be killing me at the end. With the pontoon I could lean back and drift all the while catching dozens of scrappy smallmouth bass.
