"What are the measurements of the opening in the center where they would sit? (End to end with ruler.)"

It measures a little under 6 inches.

"Will this miniature boat float in a lake?"

Yes, it will float. However, please note that it is only 7" x 1.5". Waves could easily overcome it depending on the natural weather conditions, presence of motorboats, etc. Also, the oars are not attached but freestanding.

I tried to specify but was unable to and hoped for the right color. I wanted red and got green - it’s a nice little canoe, so I just painted what I received. Sorry for not being helpful. We would like to hear if you find a solution. Good luck!
