Will it be OK to use it in a very windy condition?

That depends on where you live and how much wind we're talking about. On a NW Florida beach above 10 mph wind, the sand pockets are not enough and the stakes won't hold because the sand is too loose. As the saying goes..."Your results may vary." Here and below 10 mph...it's perfect, and the beige color is very light and is probably the coolest inside.

I am wondering if the setup and take down is easy enough for a single middle-aged woman in her late 50's?

Hi Abbe, I'm not single and am 61, but I decided to practice setting it up by myself. The first time wasn't as easy as some made it out to be. It probably took me around 10 minutes to get it figured out, but once I did, it wasn't hard.
